Ingredients

  • 1 tbsp vegetable oil

  • 1 medium onion, chopped

  • 1 clove garlic, crushed

  • 1 heaped tsp ground cumin

  • 1/2 tsp ground cinnamon

  • 4 large tomatoes, diced

  • Chilli, to taste

  • Ground black pepper

  • 100g feta cheese, cubed

  • 2 whole eggs + 2 egg equivalent of egg white

  • 1 small bunch coriander, washed and leaves and stalks chopped

  • 1/2 tbsp ground linseeds

  • 1 tbsp chia seeds

  • 1 tbsp pumpkin seeds

Preparation

Step 1


Heat oil in a medium frying pan, to medium heat. Add onion and sauté until tanslucent. 5-7 minutes.



Step 2


Add garlic, cumin and cinnamon. Sauté for 2 minutes.



Step 3


Add cubed tomatoes and chilli and reduce for 5 minutes. Add black pepper.



Step 4


Sprinkle the feta cubes into the tomato mixture, make two "holes" and put one serving of the egg into each.



Step 5


Sprinkle remaining ingredients on top of the tomato and egg mixture, put a lid on it, lower the heat and let the eggs cook to your taste in the steam.
